Here at Emery's Farm, we are famous for our all natural and Certified Organic blueberries.
We believe that our blueberries are great for pies - such as our very own blueberry pie and crumbles.
However, if you are looking for something a little different, we recommend trying our recipe for blueberry and lemon bread. These are great for breakfast, lunch, dinner - or just any time of the day.
The ingredients you'll need are: one cup of our Organic blueberries, rinsed and drained, two teaspoons of all-purpose flour, a third of a cup of butter - softened, one cup of white sugar, two large eggs, two teaspoons of grated lemon zest, one and a half cups of all-purpose flour, one teaspoon of baking powder, one pinch of salt and half a cup of full fat milk.
Firstly, you'll need to dredge the blueberries in the two teaspoons flour and set that aside.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Then, stir in eggs one at a time - whilst beating well with each addition.
After they are nicely combined, mix in the lemon zest and in a separate bowl combine flour, baking powder and salt.
Then, gently stir the flour mixture into the egg mixture alternately with the full fat milk. When they are incorporated, fold in the blueberries and pour batter into prepared loaf pan.
Bake in preheated oven 350 F oven for 50 to 60 minutes or until a toothpick inserted into center of the loaf comes out clean.
We recommend alloying the bread to cool for 10 minutes before removing from pan.
