Here at Loon Organics, we are a co-owned and operated by Laura Frerichs and Adam Cullip. We are a small farm of about 7 acres of certified organic vegetables and herbs. Our farm features about 40-acres of organic goodness just west of Hutchinson.
We provide for a 165-member CSA. These include local retailers, restaurants, and the Mill City Farmers Market in Minneapolis.
We believe that fresh, local and organic food is not only better for your health, but also better in taste. If you don't believe us, then try one of our favourite recipes for breakfast - our famous Carrot Cinnamon Waffles. It tastes similar to a cross between a carrot cake and a waffle - perfect for those Sunday breakfast.
For this recipe, make sure to use as much organic and fresh ingredients as you can - you'll definitely notice a wonderful difference in taste.
We recommend topping this with organic yogurt or B grade maple syrup. It's also great just by itself.
To begin you'd need 1.5 Cups of whole wheat flour, 3 tablespoon of coconut sugar, 1.5 teaspoon of baking powder, one teaspoon of baking soda, pinch of salt, one teaspoon of ground cinnamon, a quarter teaspoon of cloves, two free range Eggs, one and a quarter cup of organic milk, 1/2 a stick or organic butter and one and a half cups of freshly grated organic carrots.
You will need to preheat a waffle iron to medium heat and spray with nonstick spray if needed.
In a large bowl, combine the flour, sugars, baking powder, baking soda, salt, cinnamon and cloves - these are your dry ingredients.
In a separate bowl, whisk the wet ingredient together - the eggs, milk and butter.
Then simple add the dry with the wet whisk until well combined. After that, stir in carrots. Then, spoon in the mixture onto the waffle machine and cook according to your waffle iron’s directions.
