One of our most popular recipes here at the Hendersonville Community Co-op is our famous and ever so delicious, Fat Free Banana Muffins.
These little pockets of fruity goodness is not only Healthy for you but also moist and addictive. Because there is no oils, fats and unhealthy ingredients used, you should not feel guilty at all.
Here we use oat bran - which is the edible, outermost layer of the oat kernel. Oats themselves is considered both a food and an herb. Similar to oatmeal, oat bran contains B complex vitamins, protein, minerals, and healthy dose soluble fibre. It is also great at helping you reduce your bad LDL and help raise levels of good HDL cholesterol.
For our Fat Free Banana Muffins the ingredients are:
1 large or 2 small ripe bananas - chopped, ¾ cup of oat bran, 1 cup of rolled oats, ¾ cup of apple juice, 1/3 cup maple syrup or honey, 1/3 cup plus 1 Tbsp. of water, nutmeg, cinnamon and vanilla.
All you need to do is to combine dry ingredients together. Then, in a separate bowl mix, mix all the wet ingredients - the apple juice, maple syrup, water and vanilla.
Afterwards, combine the dry with the wet and fold in the chopped bananas.
Spoon the batter onto into lined muffin tins and bake at 350° until well browned. This should take about 20 to 25 minutes.
