One of our favourite garlic recipes using our very own products is our very own Garlic Filet Mignon. The garlic here goes beautifully with the steak and herbs. It is also super simple to make - and fancy enough to impress any guests you have coming.
To start of with, you will need four 8-oz. filet mignons - seasoned with salt and pepper to taste, two tablespoons extra virgin olive oil, four tablespoons of butter, two tablespoons our Diva Farms Organic Minced Garlic, one tablespoon of chopped shallots, two tablespoons of chopped fresh parsley, one tablespoon of fresh thyme, one tablespoon of fresh tarragon and about one oz. of cognac.
The steps are relatively straight forward. Flatten the filets to 3/4 inch high and season both sides well with salt and pepper.
The, heat a thick skillet over high heat and add the olive oil and about 1 tablespoon of butter.
When butter is brown, add the filet and cook about 2 minutes on each side.
Once you have it cooked to how you like it, remove the filets and place on plate and add garlic, shallots and herbs to skillet and sauté until brown.
Remove from heat and add cognac after 30 seconds. Return to low heat and add remaining butter for a shiny finish.
Then, stir mixture to form sauce and pour it over filets.
We recommend serving this with some seasonal green vegetables and potatoes.
