Here at the Garden of Eden Organics, we believe that being healthy does not mean depriving ourselves from food - especially delicious food.
Being healthy means to deprives ourselves of anything that is processed and artificial and instead eat the right sort of foods. That means - anything that is seasonal, natural, organic, fresh and local. Yes, eating healthy can also mean stuffing yourself with a big slice of Chocolate cake.
To best enjoy our all natural and raw chocolate cake, we recommend using ingredients that are local and organically grown when possible for nutrition and taste.
To make our decadent and dense Raw Chocolate Cake, you'll need some very simple ingredients: 1.5 cups of raw walnuts - unsoaked, small dash of kosher salt, about ten pitted medjool dates - unsoaked, a third of a cup of unsweetened cocoa or carob powder, half a teaspoon of vanilla extract, two teaspoon of water and half a cup fresh organic berries to garnish.
To begin, you need to place the walnuts and salt into a food processor fitted with the S-blade and process until everything is been finely ground.
Then add the dates, cocoa powder, and optional vanilla and process until the mixture begins to stick together nicely.
Add the water and process a bit more. We recommend substituting the water for all natural orange juice for that delicious chocolate orange combination.
Then transfer the mixture into a 5-inch-round cake and chill for 2 hours covered with plastic wrap. You can decorate the cake with fresh berries before serving if desired.
This raw Chocolate cake will keep well for about three days in the refrigerator or up to a fortnight in the freezer.
