One of our favourite way to enjoy healthy, Local Organic Food is with a salad - like a red jewel salad which is high in vitamins, minerals, antioxidants and of course, taste.
To make this salad, we'd recommend using only fresh and local organic ingredients - just like the ones you can buy from our store,
You'd need: two medium size beets stems trimmed to one inch, about ten cups loosely packed salad greens, four tablespoons extra virgin olive oil, one tablespoon sherry vinegar, half a teaspoon sea salt, Black pepper to taste, one scallion green and white both cut into thin slivers and about two ounces of blue cheese or feta - crumbled.
You'd need to firstly, pre-heat the oven to 400 degrees F and place the washed beets in a lidded baking dish with about half an inch in height of water. Here, you'd need to roast then for about an hour - until a fork easily pierces the beets.
The, slip off the skins and cut the beets into small bite size pieces. Place the cut beets in a small bowl to use later. Wash the greens and place in a large salad bowl and in a small bowl, whisk together the oil vinegar and salt together.
Add the scallions and cheese to the greens and toss about 1 tablespoon of the dressing with the beets. Add the remainder of the home-made dressing to the greens and mix well.
Place the beets in the salad so they show off their beautiful bright red color.
