One of our favourite weekday dinners is our super Quick Turkey Breast Bake with ginger & coconut milk.
This recipe is a fresh and delicious Thai inspired recipe that you can make any day of the week. The juices from the turkey will blend nicely with the coconut milk mixture and what you get is a gravy. Serve this with jasmine rice for a Asian weeknight dinner.
Firstly you'd need to thaw a GrassWay Farm turkey breast. We recommend making the slices about 1 – 1.5 inch thick and place them neatly in a 9×13 pan.
With the stove on medium heat add a can of organic coconut milk, a 2 inch piece of ginger - minced, fresh lime juice from 1/2 to 1 whole lime, salt and pepper to your liking and fresh organic cilantro - about half a cup, chopped.
Then, heat gently and pour over turkey breasts. Cook in 350 degree oven until turkey is done and this will take about 30 minutes.
Serve with rice.
