Our Fresh Quinoa salad is one of our favourite recipes at the moment. It is delicious, simple to make and it goes to everything - you can eat it along or use it as a side dish for dinner.
Quinoa way is one of the healthiest powerhouses of the grain world. It is not only gluten free, but is also a fantastic protein, fiber, magnesium and iron.
Quinoa is a complete protein. This means that it provides us with all of the essential amino acids that we need for a healthy lifestyle.
For the Quinoa Salad, the first step is to cook the quinoa. Before cooking the quinoa, make sure you soak the quinoa for at least a few hours. This will to help break down the saponins that leave a bitter taste. Also, these saponins are not good for you and soaking the quinoa will help get rid of them.
After soaking, rinse a few times and add the soaked quinoa to boiling water and reduce to a simmer. The general ratio of quinoa to water is 1:2. Cook for 15-20 minutes - or until it's to a texture that you prefer.
Allow to cool and then mixed the cooked quinoa to a small Bunch of Cilantro, diced Green Onions, diced tomatoes, a quarter Cup of Lemon Juice, two Tablespoons of extra Olive Oil and salt and paper to taste.
We recommend serving this with grilled chicken or roasted sweet potatoes for a vegetarian option.
