One of our favourite ways to cook Chicken here at Honeyhill Farm is to roast it using our famous Roast Chicken recipe.
This is not only a super simple way to make a great meal, but the result is always succulent, juicy and delicious.
To make this, you'd need: one Honeyhill Real Chicken - fully thawed, one lemon or Orange that is quartered, a bunch of fresh Rosemary and a few Sage leaves, two cloves of organic garlic and two tablespoons of Olive Oil.
Firstly, you'd need to wash the chicken thoroughly under cold running water and pat dry once it's clean. Then, grind the fresh herbs, garlic and salt in a mortar and pestle with the olive oil to make a delicious and aromatic blend.
Using your hands, massage this lovely mixture inside and out of the washed chicken. Then, stuff the cavity of the bird with your lemon or orange quarters.
After that, place the chicken gently on a rack in a roasting pan with a about half cup of water. We also recommend covering it with lots of fresh ground black pepper for that little extra kick.
All you need to do now is to roast the chicken uncovered in a preheated oven at about 450 F for 15 minutes. Then, cover it with some aluminium foil and reduce heat to 275 F and allow it to cook further - about 15 minutes for every pound.
Of course, cooking times will vary so please use a meat thermometer to make sure it's fully cooked. When it reaches 165 degrees F internal temperature - remove it from the oven and allow it to sit covered at room temperature for 10 minutes before carving.
