All you need to make this delicious dish are a package of Penguin Natural Foods Scalloped Potatoes, about two tablespoons of organic butter, three cups of thinly sliced onions, one pound of sliced button mushrooms, one teaspoon of chopped fennel seeds, and about five ounces soft fresh goat cheese - crumbled.
You will need to preheat oven to 400 degrees to begin. Then, empty potatoes into one and a half quart casserole.
Melt the butter in heavy large skillet over medium-high heat and add the onions. Saute the onions until they are golden and this generally takes about 15 minutes. Then, add mushrooms and fennel seeds and saute until the mushrooms are brown - around 10 minutes should do.
Meanwhile, mix boiling water, sauce mix, milk and butter together. Then, add the mushroom mixture and goat cheese and mix until they are thoroughly combined.
Pour mixture over potatoes and bake the dish uncovered for 30 to 35 minutes - this until potatoes are tender and top is golden. When you pull it out, let stand a few minutes until sauce thickens slightly.
This recipes serves 6 to 8. It's a great Vegetarian dish - quick and simple to make.
