Here at Quiet Creek Farm, we are a Community Supported Agriculture farm and we are located at the Rodale Institute in Kutztown. We feed two hundred and fifty families each season with about ten acres of certified organic farmland. We also feature a large garden and a local, sustainable food marketplace for CSA members.
The produce we have are all is certified and organically grown. We love using fresh and season produce to cook. Our current favourite Winter recipe here at Quiet Creek Farms is our Simple Potato Gratin.
All you will need are about three tablespoons of organic butter - cut into pieces, plus an additional pat for buttering gratin dish, four large yellow potatoes - peeled, Kosher Salt and freshly ground black pepper to taste, one cup of organic and about 2 ounces of organic cheese - grated or crumbled. Here we recommend blue cheese.
To begin, you'd need to preheat the oven to 350°F and grease a 9 by 12 inch gratin dish with the pat of butter.
Then, slice the potatoes as thinly as you can and here we recommend using a mandoline for simple and perfectly thin slices. Arrange the slices in layer and you can overlap the edges slightly if necessary.
Then sprinkle the potatoes with salt and freshly ground pepper. Use a good amount because this is where the most of the flavour will come from.
Then, sprinkle on a third of the cheese before before repeating this process with your remaining potato slices. Generally, you should have about three layers.
Then, carefully pour the milk over the potatoes - make sure that it comes up to the bottom of the top layer of potatoes. Dot the top layer with the three tablespoons of butter and bake it for about an hour.
The gratin should be done when the potatoes are soft and the top is golden brown.
