You can take them anywhere with you as they are easy to pack - take them to a picnic or have them when you're on the run. They'll also be perfect as a healthier choice for school bake sales.
This sweet potato and oatmeal bar recipe is suitable for those on a vegetarian or Vegan Diet.
The ingredients for this recipe are: two cups of cooked and mashed sweet potatoes, a quarter cup of real grade B maple syrup, one and a half teaspoons of cinnamon - divided, a quarter cup of canola oil, a quarter cup of water, two cups of rolled oats, another quarter cup of maple syrup, one cup of chopped walnuts and one cup of whole wheat pastry flour.
You'd need to preheat oven to 350 degrees before collecting the ingredients.
Place sweet potatoes, maple syrup along with one teaspoon cinnamon in a food processor and mix until you get a smooth paste.
In a medium bowl, stir and mix in the oats, nuts, flour and 1/2 teaspoon cinnamon and set aside. Then, mix in the maple syrup, oil and water separately and add it to the dry.
Divide dough in half and press half of dough to the bottom of a 8 by 8 inch pan. Spread the sweet potato mixture over the dough evenly.
Then, crumble in the remaining half of the dough evenly over the top of the sweet potato.
Press it gently - not too hard and bake this for about 20 minutes or until slightly crisp on top and golden.
