At the Hollygrove Market and Farm, we believe that fresh, natural and organic food make the best dishes in terms of taste and health.
One of our favourite healthy versions of a winter comfort food - curry - is our Vegetarian Tomato and Okra Curry.
To make this, you'd need about 3 tomatoes - medium sized, a pound of okra, one tablespoon of freshly minced garlic, a quarter cup of organic butter or oil for vegans, two teaspoons of curry - any curry will do, salt and pepper to taste along with the juice of half of a key lime - freshly squeezed of course.
Start by coring and chopping the tomatoes small & slicing the okra about a quarter inch thick and keep in separate bowls. Add a little salt to tomatoes and let sit while you are chopping garlic and heating pan.
Then, sauté the garlic in a little butter or oil and wait until garlic is fragrant. Once it's fragrant, and then add okra, tomatoes, and curry powder.
Cook over medium for no less than 10 minutes - or until the okra is soft. The mixture will thin out the longer you cook as the vegetables release their juices.
When finished, add remaining butter, minced garlic and juice of half a key lime.
Let sit until butter is melted, stir together, and then serve over brown jasmine rice.
