Vegan Chocolate Avocado Pudding

Here at the Vegetarian Society of El Paso, there are many ways that you can indulge when it comes to food. All you need a little creativity and you can have the most delicious tasting and health food - food that you can actually indulge in.

One of our favourite dessert recipes is our chocolate pudding. Yes, you've hear it right - this is our very own version of the popular and naughty dessert. Except, our version is Vegan friendly, actually healthy to eat and still tastes amazing too. It's super creamy, rich and very chocolatey.

This pudding only takes a few minuets in the blender and it's super easy to make - even a beginner can do it. It's perfect for those on vegetarian or on a Vegan Diet - it's even suitable for anyone on a raw food diet too.

The ingredient are: two ripe avocados, two tablespoons or organic coconut oil, a third of a cup or agave or maple syrup, three dates soaked in warm water for 15 minutes and chopped, half a cup of organic cacao powder, two teaspoons vanilla extract and about three quarters of a cup of almond milk.

To begin, you need to add all the ingredients to a blender or food processor - the oil, dates, honey, vanilla, half your non-dairy milk, avocados, cocoa powder. Then, blend until smooth. This would take about 2-3 minutes. 

After that add in the additional milk until the pudding is the consistency you desire. We recommend making it a little on the thin side because it will thicken after chilling in the refrigerator.

Then spoon into ramekins or bowls, cover and chill for at least 2 hours.

You can serve this with you favourite toppings - we recommend pistachios for their bright colour and wonderful nutty flavour.
